simple winter oatmeal recipe (vegan & gluten-free)

I love a warm bowl of oatmeal pretty much any time of year, but the winter especially has me craving it! This oatmeal is warm and nourishing, super filling, and full of all the nutrients you need as someone who is mostly plant-based or transitioning to that lifestyle.

It’s vegan, gluten-free, super simple, and also versatile - so there’s no excuse for not trying it!

ingredients

  • 1/2 cup rolled oats

  • 1 cup almond milk (or other nut milk, oat is also great!)

  • 1 tbsp. chia seeds (optional)

  • 1 tbsp. ground flax seeds (optional)

  • 1 apple (can sub with other fruits if desired)

  • 1-2 tsp cinnamon (more or less, to taste)

  • 1 tbsp. coconut oil

  • 1 spoon almond butter (or other nut butter)

  • 1 tbsp. nuts of choice (optional, walnuts and pecans recommended!)


instructions

01. Heat the almond milk in a pot over medium heat for 3-4 minutes until warmed.

02. Add the oats and half the cinnamon, and stir slowly until well combined and to desired consistency.

03. Meanwhile, heat the coconut oil in a separate frying pan over medium heat.

04. Chop the apple and add it to the pan once the coconut oil is melted.

05. Sprinkle the other half of the cinnamon on top. Stir and leave on pan until warmed through, before removing.

06. Once oatmeal is done, remove from heat and add the chia seeds and flaxseed.

07. Combine the apple and oatmeal mixture.

08. Top with almond butter and nuts (if desired).

09. Enjoy!
