banana walnut pancakes (plant-based)

Slow Saturday mornings have become really important to me — sipping my coffee while reading, attending a (virtual) morning yoga class, going to the gym or doing an at-home workout, and then making pancakes and a green juice or smoothie.

So, I’ve been experimenting with some pancake recipes that are both healthy(ish) and delicious!

Here’s one of my favourites: a simple and healthy pancake recipe using a base of whole wheat flour and mashed banana! These are completely plant-based and use simple ingredients you likely have already in your house.

dry ingredients

  • between 3/4 - 1 cup whole wheat flour

  • 1 tbsp flaxseed

  • 1 tbsp chia seeds

  • 1 tbsp baking powder

  • pinch or two of salt

  • 1 tsp cinnamon

  • 1/2 cup walnuts (optional)

wet ingredients

  • 1 large ripe banana, mashed

  • 1 tbsp maple syrup (plus more, to top)

  • 3/4 cup almond milk + 2 tbsp

  • 1 tsp vanilla

  • 1 tbsp melted coconut oil (olive oil would also work)


instructions

01 mix wet ingredients (minus the coconut oil) in one bowl + dry ingredients in another

02 mix together (don't let sit for too long or the chia seeds will cause the batter to get too thick)!

03 add the coconut oil to a pan over medium high-heat and let melt (once your pan is hot and you’ve cooked a few pancakes you might be able to turn down the heat, depending on the power of your burner)

04 use a spoon or ice cream scoop to pour the batter into roughly even pancake shapes

05 cook for 2-3 minutes, flipping when bubbly and nicely browned. Let cook for 1-2 minutes more before pulling off the pan.

*Optional add-ins include blueberries and chocolate chips. Add these when the pancakes are cooking in the pan.
